Ramen NOBU Stockel

The journey of Nobu Ishii from the world of apparel to the pinnacle of the culinary scene is nothing short of remarkable. Leaving his career in apparel behind, Ishii plunged into the world of ramen by training at the esteemed “Higashi-Ikebukuro Taishoken”. His passion for ramen took a creative turn as he ventured into online ramen sales and event participation, developing numerous collaborative products along the way. With a wealth of experience under his belt, he opened “Taishoken Mishima” in Shizuoka, and didn’t stop there. His ambition led him to Europe, where he now operates “Ramen NOBU”, leaving a significant mark on the food industry. Ishii’s story is a testament to the power of passion, innovation, and the courage to embrace change.

RIO Brewing UIJIN

UIJIN was created by Ryohei Sugawara, Japanese man who has been introducing Belgian beers to Japanese consumers for more than 20 years. Ryohei is one of a few Honorary Knights of the Knighthood of the Brewers’ Mash staff (Belgian brewers’ Guild.) UIJIN in Japanese means simply ‘one’s first battle.’ We would like you to drink this UIJIN as your first choice of drink at every meal. Ryohei designed UIJIN in a way it can be paired with variety of cuisines especially with Japanese food. Exquisite blend of barley and wheat malt and Belgian yeast gives freshness, yet complex taste

Sushi Fumi

Chef Fumi Atsumi educated at the Tokyo Sushi Academy, where she earned her Sushi School Diploma in 2016, Fumi mastered traditional sushi preparation techniques. Her expertise was recognized in 2019 with a special certificate, awarded in the presence of the Japanese ambassador. For Fumi, the essence of exceptional sushi lies in the freshness of the rice.

Land of Sake

Konishi is one of the oldest sake breweries in Japan, with a family history dating back to 1550. The brewery is today owned by the 15th generation. The house brand sake Shirayuki (“white snow”) is based on this family tradition and age-old brewing techniques. Konishi also markets a range of innovative, premium sake under its name.

Yasushi Sasaki, after ten years at Mahieu, opened his own patisserie in Vogelzang, earning acclaim for his refined and precise chocolates for sixteen years.
He excels in creating light, intense flavors, like his noted tonka bean pralines and matcha ganaches. As a mentor, his team members have won medals at the Belgian Chocolate Awards, showcasing their innovative creations.
His efforts and the quality of his chocolates have won him the title of Brussels’ Chocolatier of the Year.
